1 large head of cauliflower, cut into florets

4 tablespoons olive oil

6 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 cup heavy cream

1 cup grated Parmesan cheese, divided

1 cup shredded mozzarella cheese

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, minced garlic, salt, black pepper, smoked paprika, and dried thyme until evenly coated.

      Roast the Cauliflower: Spread the cauliflower on a large baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until the florets are golden and tender, stirring halfway through.

        Mix the Cream Sauce: While the cauliflower is roasting, in a saucepan over medium heat, combine the heavy cream and 1/2 cup of Parmesan cheese. Stir until the cheese is melted and the mixture is heated through. Remove from heat.

          Combine and Bake: Once the cauliflower is roasted, transfer it to a greased 9x13 inch baking dish. Pour the creamy cheese mixture over the cauliflower. Top with the remaining 1/2 cup of Parmesan cheese and the shredded mozzarella.
