2 cups snap peas, trimmed and halved

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

3/4 cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup crumbled feta cheese (optional)

Fresh dill sprigs for garnish (optional)

Prepare the Snap Peas: Bring a medium-sized pot of salted water to a boil. Add the snap peas and blanch for about 2 minutes until they are vibrant green and tender-crisp. Quickly transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain and pat dry.
