Creamy Dill Chicken Lettuce Wraps

1 lb (450g) boneless, skinless chicken breasts, diced

2 tbsp olive oil

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

2 tbsp fresh dill, finely chopped (or 1 tbsp dried dill)

1 tbsp lemon juice

1 garlic clove, minced

Salt and pepper, to taste

1/4 cup diced red onion

1/4 cup diced cucumber

1/2 cup cherry tomatoes, halved

Romaine or Butter lettuce leaves, for wraps

Optional: slices of avocado or radishes for garnish

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken breasts and season with salt and pepper. Sauté for about 7-10 minutes, or until the chicken is cooked through and golden brown. Remove from heat and let cool slightly.

    Prepare the Creamy Dill Sauce: In a mixing bowl, combine the Greek yogurt, mayonnaise, fresh dill, lemon juice, minced garlic, and a pinch of salt and pepper. Mix well until all ingredients are thoroughly combined.

      Mix the Chicken: Once the chicken has cooled, add it to the bowl with the creamy dill sauce. Gently stir until all the chicken pieces are coated with the sauce.
