Creamy Cilantro Chicken Wraps

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup fresh cilantro leaves, chopped

1/2 cup plain Greek yogurt

1/4 cup mayonnaise

2 tablespoons lime juice (freshly squeezed is best)

1 teaspoon lime zest

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

4 large flour tortillas or whole wheat wraps

1 cup mixed greens or baby spinach

1 avocado, sliced

1/2 cup cherry tomatoes, halved

Optional: crushed red pepper flakes for added spice

Prepare the Cilantro Cream Sauce: In a medium bowl, combine the Greek yogurt, mayonnaise, chopped cilantro, lime juice, lime zest, garlic powder, and cumin. Mix well until smooth and creamy. Season with salt and pepper to taste. If you prefer a little heat, add in a pinch of crushed red pepper flakes.

    Mix the Chicken: In another bowl, add the shredded chicken and about half of the cilantro cream sauce. Toss the chicken until it’s evenly coated. Adjust seasoning if necessary.

      Assemble the Wraps: Lay out each tortilla flat on a clean surface. Spread a generous layer of the remaining cilantro cream sauce over each tortilla (about 2 tablespoons per wrap).

        Layer Ingredients: On each tortilla, place a handful of mixed greens, an even amount of the cilantro-coated chicken, avocado slices, and cherry tomato halves.

          Wrap it Up: Starting at one end, carefully fold the tortilla over the filling. Tuck in the sides and roll tightly to form a wrap. Repeat with all tortillas.

            Slice and Serve: Cut each wrap in half diagonally for easy eating. Serve them chilled or at room temperature, with additional sauce on the side for dipping.
