1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red, yellow, or green), diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 packet taco seasoning mix (approx. 1 oz)

1 cup chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

Salt and pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Tortilla chips, optional for serving

Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken breast. Season with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through. Stir occasionally to ensure even cooking.
