Creamy Cheesy Cauliflower Rice

1 large head of cauliflower (yields about 4 cups riced cauliflower)

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

3 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Prepare the Cauliflower: Remove the leaves and stem from the cauliflower and cut it into florets. Using a food processor, pulse the florets until they resemble rice grains. Alternatively, you can use a box grater to grate the cauliflower into rice-like pieces.

    Cook the Cauliflower Rice: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
