Ingredients

1 large head of cauliflower, chopped into florets

1 cup sharp cheddar cheese, grated

1/4 cup cream cheese, softened

1/2 cup milk (or unsweetened almond milk for a lighter option)

2 tablespoons unsalted butter

2 cloves garlic, minced

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Instructions

Prepare the Cauliflower: In a large pot, bring water to a boil. Add the cauliflower florets and cook until tender, about 8-10 minutes. Drain well and set aside.

Sauté Garlic: In a medium skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic.

Blend Ingredients: In a food processor or using an immersion blender, combine the cooked cauliflower, sautéed garlic (and butter), cream cheese, and milk. Blend until smooth and creamy.

Incorporate Cheese: Add the shredded cheddar cheese to the cauliflower mixture and blend again until the cheese is melted and fully incorporated. If needed, adjust the consistency with additional milk until you reach your desired creaminess.

Season: Taste and season with salt and pepper as required.

Serve: Spoon the creamy cheddar cauliflower mash into a serving bowl. Garnish with chopped chives or parsley for a fresh touch.

Enjoy: Serve warm as a delicious side dish or a satisfying main course alternative.
