1 medium head cauliflower, chopped

2 tablespoons olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 cup unsweetened almond milk (or any milk of choice)

1 teaspoon nutritional yeast (optional, for a cheesy flavor)

Salt and pepper, to taste

1 teaspoon Italian seasoning (optional)

8 oz fettuccine pasta (or pasta of choice)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for serving)

Instructions
 

Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower and cook for about 10-12 minutes, or until tender. Drain and set aside.

    Sauté the Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to brown it.

      Blend the Sauce: In a blender or food processor, combine the cooked cauliflower, sautéed garlic, vegetable broth, almond milk, nutritional yeast, salt, pepper, and Italian seasoning. Blend until smooth and creamy. If the sauce is too thick, add more broth or milk until desired consistency is achieved.

        Cook the Pasta: In a separate pot, cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta.

          Combine the Sauce and Pasta: Return the drained pasta to the pot over medium-low heat. Pour the cauliflower alfredo sauce over the pasta and mix well. If the sauce is too thick, add a little of the reserved pasta water until the desired creaminess is reached.

            Finish with Cheese: Stir in the grated Parmesan cheese until melted and well incorporated. Adjust seasoning with more salt and pepper if needed.
