Creamy Broccoli Rice Casserole

2 cups fresh broccoli florets, chopped

1 cup uncooked long-grain white rice

3 cups vegetable or chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Dijon mustard

½ teaspoon black pepper

½ teaspoon salt

1 cup breadcrumbs (optional for topping)

2 tablespoons olive oil or melted butter (for breadcrumbs)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a medium saucepan, combine the uncooked rice and vegetable or chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.

      While the rice is cooking, in a large mixing bowl, whisk together the heavy cream, sour cream, garlic powder, onion powder, Dijon mustard, black pepper, and salt until well combined.

        In a separate pot, bring a small amount of water to a boil. Blanch the chopped broccoli florets for 2-3 minutes until bright green and tender-crisp. Drain and rinse with cold water to stop the cooking process.

          Once the rice is done, fluff it with a fork and fold it into the creamy mixture. Then, gently stir in the blanched broccoli and ¾ cup of cheddar cheese until everything is evenly incorporated.

            Spray a 9x13-inch baking dish with cooking spray or lightly grease it with olive oil. Pour the broccoli rice mixture into the prepared dish, spreading it evenly.

              In a small bowl, mix the breadcrumbs with olive oil or melted butter. Sprinkle the breadcrumb mixture evenly over the top of the casserole. Then, sprinkle the remaining cheddar cheese on top for an extra cheesy layer.

                Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.

                  Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
