Creamy Broccoli Cheddar Quinoa

Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth or water

2 cups fresh broccoli florets

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/2 cup whole milk or dairy-free alternative

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Optional: chopped green onions for garnish

Instructions
 

In a medium-sized pot, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

    While the quinoa is cooking, steam the broccoli florets until they are tender but still bright green, approximately 4-5 minutes. You can use a steamer basket or microwave with a little water for steaming. Set aside.

      In a large mixing bowl, combine the cooked quinoa, steamed broccoli, minced garlic, onion powder, paprika, salt, and pepper. Mix well.

        Add the softened cream cheese to the quinoa mixture. Stir until the cream cheese is well mixed. It might take a minute or two to fully combine.

          Gradually pour in the whole milk while stirring the quinoa mixture until it reaches a creamy consistency.

            Next, fold in the shredded cheddar cheese until it melts and integrates into the dish. Taste and adjust seasoning as needed.

              If you prefer your dish extra cheesy, feel free to add more cheddar cheese or even some grated parmesan on top.

                Serve warm, garnished with chopped green onions if desired.
