Creamy Baked Penne with Spinach & Alfredo

12 oz penne pasta

2 tbsp olive oil

3 cloves garlic, minced

6 cups fresh spinach, washed and roughly chopped

1 cup heavy cream

1 cup whole milk

1 cup grated Parmesan cheese

1 ½ cups shredded mozzarella cheese, divided

1 tsp salt

½ tsp black pepper

½ tsp nutmeg

1 tsp Italian seasoning

¼ tsp red pepper flakes (optional)

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: Preheat your oven to 350°F (175°C). In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.

    Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Next, add the chopped spinach, cooking until wilted, about 3-4 minutes. Remove from heat.

      Make the Alfredo Sauce: In a medium saucepan, combine the heavy cream and whole milk over medium heat. Gradually whisk in the grated Parmesan cheese until melted and smooth. Season with salt, black pepper, nutmeg, Italian seasoning, and red pepper flakes if using. Keep stirring until the sauce is well combined and thickened slightly, about 5-7 minutes.

        Combine Pasta and Spinach: In a large mixing bowl, combine the cooked penne, sautéed spinach, and half of the mozzarella cheese. Pour in the creamy Alfredo sauce and mix until everything is evenly coated.

          Prepare for Baking: Transfer the pasta mixture to a greased 9x13-inch baking dish. Sprinkle the remaining shredded mozzarella cheese on top.

            Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

              Serve: Remove from the oven and let it cool for 5-10 minutes. Garnish with freshly chopped parsley, if desired, and serve warm.
