Creamy Avocado Ranch Wraps

4 large whole wheat tortillas

2 ripe avocados, mashed

1 cup plain Greek yogurt

2 tablespoons ranch seasoning mix

1 cup shredded carrots

1 cup baby spinach or mixed greens

1 cup cherry tomatoes, halved

1/2 cup cucumber, thinly sliced

Salt and pepper to taste

Optional: 1/4 cup shredded cheese (cheddar or mozzarella)

Prepare the Creamy Ranch Spread: In a medium-sized bowl, combine the mashed avocados, Greek yogurt, and ranch seasoning mix. Blend until smooth and creamy. Season with salt and pepper to taste. Set aside.

    Layer the Fillings: Lay a tortilla flat on a clean surface. Spread approximately 1/4 of the avocado ranch mixture evenly over the tortilla, leaving about an inch border around the edges.

      Add the Veggies: On top of the spread, layer 1/4 cup of shredded carrots, a handful of baby spinach, 1/4 cup of halved cherry tomatoes, and a few slices of cucumber. If using, sprinkle 1 tablespoon of shredded cheese on top of the vegetables.

        Wrap It Up: Fold the sides of the tortilla inward, then roll from the bottom up to tightly enclose the fillings. Repeat with the remaining tortillas and ingredients.
