Creamy Avocado Pasta with Basil

12 oz pasta of choice (spaghetti or fettuccine work well)

2 ripe avocados

1 cup fresh basil leaves, packed

2 cloves garlic, minced

1/4 cup freshly grated Parmesan cheese (plus more for serving)

2 tablespoons olive oil

Juice of 1 lemon

Salt and freshly ground black pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a kick)

Extra basil leaves for garnish

Cherry tomatoes, halved (optional, for serving)

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

      Prepare the Avocado Sauce:

        - In a food processor, combine the avocados, basil leaves, minced garlic, Parmesan cheese, olive oil, lemon juice, salt, black pepper, and red pepper flakes (if using). Blend until smooth and creamy. Add a little reserved pasta water to adjust consistency if needed.

          Combine Pasta and Sauce:

            - In the pot or a large skillet, combine the cooked pasta with the avocado sauce. Toss well to coat all the pasta. If the sauce is too thick, gradually add more reserved pasta water until desired consistency is reached.

              Serve:

                - Divide the creamy avocado pasta among serving plates. Top with additional grated Parmesan cheese, extra basil leaves, and halved cherry tomatoes if desired. Finish with a drizzle of olive oil for added richness.
