12 oz (340 g) spaghetti or your favorite pasta

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1 cup fresh basil leaves, packed

1/4 cup freshly squeezed lemon juice

1/4 cup extra virgin olive oil

Salt and freshly ground black pepper, to taste

1/4 cup grated Parmesan cheese (optional, for serving)

Cherry tomatoes, halved (for garnish)

Additional basil leaves (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Creamy Avocado Sauce: In a food processor or blender, combine the avocados, minced garlic, fresh basil leaves, lemon juice, and olive oil. Blend until smooth and creamy. If the mixture is too thick, gradually add some reserved pasta water until you reach your desired consistency.

      Season: Taste the avocado sauce and season with salt and freshly ground black pepper. Blend again to mix.

        Combine Pasta and Sauce: In a large bowl, toss the cooked spaghetti with the creamy avocado sauce until well coated. If needed, add more reserved pasta water, a tablespoon at a time, to achieve a silky sauce.

          Serve: Divide the pasta among serving plates. If desired, sprinkle with grated Parmesan cheese. Garnish with halved cherry tomatoes and additional basil leaves for a pop of freshness.
