Creamy Avocado Pasta with Basil

12 oz pasta (spaghetti or your choice)

2 ripe avocados, pitted and peeled

1 cup fresh basil leaves, packed

2 cloves garlic, minced

1/4 cup freshly squeezed lemon juice

1/4 cup extra virgin olive oil

1/4 tsp red pepper flakes (optional)

Salt and black pepper, to taste

1/2 cup cherry tomatoes, halved (for garnish)

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Avocado Sauce: In a food processor or blender, combine the avocados, basil leaves, minced garlic, lemon juice, olive oil, red pepper flakes (if using), and a pinch of salt and pepper. Blend until smooth and creamy. If the mixture is too thick, gradually add some of the reserved pasta water until the desired consistency is reached.

      Combine Pasta and Sauce: In a large mixing bowl, toss the cooked pasta with the creamy avocado sauce until evenly coated. If needed, add more reserved pasta water to ensure the sauce clings well to the pasta.

        Adjust Seasoning: Taste and adjust the seasoning with additional salt and pepper, as necessary.
