12 oz (340g) spaghetti or pasta of choice

2 ripe avocados, halved and pitted

1 cup fresh basil leaves, tightly packed

2 cloves garlic, minced

2 tbsp lemon juice

3 tbsp olive oil

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

1/2 tsp red pepper flakes (optional for heat)

Cherry tomatoes, halved (for garnish)

Extra basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Avocado Sauce: In a food processor, combine the ripe avocados, fresh basil leaves, minced garlic, lemon juice, and olive oil. Process until smooth and creamy. If the mixture is too thick, gradually add reserved pasta water until desired consistency is reached.

      Combine Pasta and Sauce: In the large pot used for cooking the pasta, add the drained spaghetti and the creamy avocado sauce. Toss well to coat all the pasta evenly. If needed, add more reserved pasta water to loosen the sauce.
