2 ripe avocados, pitted and peeled

2 cups fresh basil leaves, loosely packed

3 cloves garlic, minced

1/4 cup olive oil

1/4 cup freshly grated Parmesan cheese (plus more for serving)

1 tablespoon lemon juice

Salt and pepper, to taste

8 oz. spaghetti or your favorite pasta

1 cup cherry tomatoes, halved (optional for garnish)

Crushed red pepper flakes (optional, for heat)

Instructions
 

Begin by cooking the pasta according to the package instructions in salted boiling water until al dente. Reserve about 1 cup of the pasta cooking water, then drain and set aside.

    In a food processor or blender, combine the avocados, basil leaves, minced garlic, olive oil, Parmesan cheese, lemon juice, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, gradually add in some of the reserved pasta water until you reach your desired consistency.

      In a large mixing bowl, toss the drained pasta with the creamy avocado sauce, ensuring the pasta is evenly coated. If needed, add more reserved pasta water to create a silkier texture.

        Serve the creamy avocado pasta in individual bowls, garnished with extra Parmesan cheese, halved cherry tomatoes, and crushed red pepper flakes if you like a bit of spice.
