12 oz (340g) linguine or spaghetti

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1 cup fresh basil leaves, packed

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Extra basil leaves (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta and set it aside.

    Prepare the Avocado Sauce: In a food processor, combine the ripe avocados, minced garlic, fresh basil leaves, olive oil, lemon juice, lemon zest, red pepper flakes (if using), and a pinch of salt and pepper. Blend until creamy and smooth, scraping down the sides as needed.

      Combine the Pasta and Sauce: In a large mixing bowl, combine the drained pasta and the creamy avocado sauce. Toss gently until the pasta is evenly coated. If the sauce is too thick, gradually add the reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
