12 ounces spaghetti or your choice of pasta

2 ripe avocados, halved and pitted

1 cup fresh basil leaves, packed

2 tablespoons lemon juice (about 1 lemon)

2 cloves garlic, peeled

1/4 cup raw almonds (or pine nuts)

1/4 cup extra virgin olive oil

Salt and pepper to taste

1/4 teaspoon crushed red pepper flakes (optional, for a kick)

Freshly grated Parmesan cheese for serving (optional)

Cherry tomatoes, halved (for garnish)

Instructions
 

Cook Pasta: In a large pot of salted boiling water, cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Make the Avocado Sauce: In a food processor, combine the avocados, basil leaves, lemon juice, garlic, almonds, and olive oil. Blend until smooth and creamy. If the mixture is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

      Season the Sauce: Taste the avocado sauce and season with salt, pepper, and crushed red pepper flakes, if using. Blend again to combine.

        Combine Pasta and Sauce: In a large mixing bowl, combine the cooked pasta with the creamy avocado sauce. Toss well to coat the pasta thoroughly. If needed, add additional reserved pasta water to loosen the sauce.
