8 oz. pasta (farfalle or penne work well)

2 ripe avocados

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1/2 cup corn (fresh or canned)

1/4 cup red onion, finely chopped

1/2 cup Greek yogurt (or sour cream for a richer flavor)

2 tbsp olive oil

1 tbsp lemon juice (freshly squeezed)

1 clove garlic, minced

Salt and pepper, to taste

Fresh cilantro or basil, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Creamy Dressing: In a medium bowl, mash the ripe avocados with a fork. Add the Greek yogurt (or sour cream), olive oil, lemon juice, minced garlic, and season with salt and pepper. Mix until you achieve a creamy consistency. If the dressing is too thick, you can add a tablespoon of water to help with consistency.

      Combine Ingredients: In a large mixing bowl, combine the cooked and cooled pasta, halved cherry tomatoes, diced bell pepper, corn, and chopped red onion.
