Creamy Avocado Chicken Salad

Ingredients
  

2 cups cooked chicken, shredded (preferably rotisserie)

1 large ripe avocado, pitted and peeled

1/4 cup Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/2 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped (optional)

2 tablespoons walnuts or pecans, chopped (optional)

Lettuce leaves or whole grain bread, for serving

Instructions
 

In a medium mixing bowl, combine the ripe avocado, Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, and a pinch of salt and pepper. Use a fork to mash and mix until you achieve a creamy texture.

    In a large bowl, add the shredded cooked chicken, chopped celery, red onion, and cilantro (if using).

      Pour the creamy avocado dressing over the chicken mixture. Gently fold everything together until well combined. Taste and adjust seasoning with additional salt and pepper if needed.
