2 lbs pork shoulder or pork loin

1 can (14 oz) whole cranberry sauce

1/2 cup onion, finely chopped

3 cloves garlic, minced

1/4 cup balsamic vinegar

1/4 cup brown sugar

1 tsp dried thyme

1 tsp ground cinnamon

1/2 tsp black pepper

1/2 tsp salt

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Prep the Pork: Trim excess fat from the pork shoulder or loin and pat it dry with paper towels. Season all sides generously with salt and black pepper.

    Sear for Flavor: In a large skillet over medium-high heat, sear the pork on all sides until browned (about 4-5 minutes per side). This adds depth to the flavor. Once browned, transfer the pork to the slow cooker.

      Mix the Sauce: In a separate bowl, combine the cranberry sauce, chopped onion, minced garlic, balsamic vinegar, brown sugar, thyme, and cinnamon. Stir until well blended.

        Combine Ingredients: Pour the cranberry sauce mixture over the seared pork in the slow cooker, ensuring the pork is well coated.
