1/4 cup chopped fresh cilantro (or parsley)

2 small green onions, finely chopped

1 large egg

1/2 cup milk (dairy or plant-based)

1/4 cup mayonnaise

Prepare the Mixture: In a large bowl, combine the fresh corn kernels, flour, cornmeal, baking powder, baking soda, salt, smoked paprika, and cayenne pepper. Mix well to combine all dry ingredients thoroughly.

    Add Fresh Ingredients: Add the chopped cilantro and green onions to the dry mixture. Stir gently to incorporate the herbs.

      Mix Wet Ingredients: In a separate bowl, whisk together the egg, milk, and mayonnaise until smooth.

          Heat the Oil: In a deep skillet or frying pan, pour enough vegetable oil to cover the bottom by about 1/2 inch. Heat the oil over medium heat until it reaches about 350°F (175°C).             Fry the Fritters: Using a spoon or an ice cream scoop, carefully drop small portions of the batter (about 2 tablespoons each) into the hot oil. Do not overcrowd the pan; fry in batches if necessary. Cook for 3-4 minutes on each side until golden brown and crispy.
