Cold Tuna Pasta Salad

8 oz rotini or fusilli pasta

1 can (5 oz) tuna, drained and flaked

1 cup cherry tomatoes, halved

½ cup cucumber, diced

½ cup bell pepper, diced (any color)

½ small red onion, finely chopped

½ cup sweet corn (canned or frozen, thawed)

¼ cup black olives, sliced

2 tablespoons capers, rinsed and drained

1 teaspoon dried oregano

½ teaspoon garlic powder

Salt and pepper to taste

¼ cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

½ cup fresh basil, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the rotini or fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, dried oregano, garlic powder, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, tuna, cherry tomatoes, cucumber, bell pepper, red onion, sweet corn, black olives, and capers. Gently toss to combine.

        Add Dressing: Pour the dressing over the pasta mixture and toss gently until everything is well coated.

          Chill: Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld.
