Cold Chickpea Pasta Salad

8 oz whole wheat pasta (fusilli or penne)

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

3 tbsp red wine vinegar

1 tsp Dijon mustard

1 tsp garlic powder

Salt and pepper, to taste

Lemon wedges, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Place them in a large mixing bowl along with the drained chickpeas and chopped parsley.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper until emulsified.

        Combine Ingredients: Once the pasta has cooled, add it to the mixing bowl with the vegetables and chickpeas. Pour the dressing over the salad and toss everything gently until well combined.

          Add Cheese (Optional): If desired, gently fold in the crumbled feta cheese to add a creamy texture.

            Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. This salad can be kept in the fridge for up to three days.
