1 cup coconut milk

Zest of 2 limes

Juice of 2 limes

2 tablespoons honey

2 tablespoons soy sauce

1 teaspoon grated fresh ginger

2 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 cup shredded coconut (sweetened or unsweetened)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes to prevent burning)

Fresh cilantro for garnish

Marinate the Shrimp: In a mixing bowl, combine the coconut milk, lime zest, lime juice, honey, soy sauce, ginger, garlic, and red pepper flakes. Whisk until well combined. Add the shrimp and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning. This will help create a nice char without catching fire.
