Ingredients

4 large yellow onions, thinly sliced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon sugar

4 garlic cloves, minced

8 cups beef broth (or a mix of beef and chicken broth)

1 cup dry white wine (like Sauvignon Blanc)

2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)

2 tablespoons all-purpose flour

Freshly ground black pepper, to taste

Baguette, sliced into 1-inch thick rounds

2 cups grated Gruyère cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Caramelize the Onions: In a large, heavy-bottomed pot, melt the butter and olive oil over medium heat. Add the sliced onions, stirring to coat them well. Sprinkle with salt and sugar. Cook slowly, stirring frequently, until they become golden brown and caramelized, about 30-40 minutes. Adjust the heat as necessary to avoid burning.

Add Garlic and Flour: Once the onions are beautifully caramelized, add the minced garlic and cook for an additional 2-3 minutes. Sprinkle the flour over the onions, mixing well to incorporate. This will help thicken the soup.

Deglaze with Wine: Pour in the white wine, scraping the bottom of the pot to deglaze. Allow the wine to simmer for about 5 minutes, letting the alcohol evaporate and the flavors meld.

Add Broth and Thyme: Slowly add the beef broth while continuously stirring. Stir in the thyme, and season with freshly ground black pepper. Bring the soup to a gentle simmer, and let it cook uncovered for approximately 30 minutes.

Prepare Baguette Toppings: While the soup is simmering, preheat your oven to 400°F (205°C). Place baguette slices on a baking sheet and toast them in the oven for about 5-7 minutes until crisp and golden.

Broil the Cheese: For serving, ladle the hot soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl, then generously sprinkle with Gruyère and Parmesan cheeses. Broil on high for about 2-4 minutes until the cheese is bubbly and golden.

Serve: Carefully remove the bowls from the oven and let them cool slightly. Garnish with chopped parsley before serving. Enjoy your comforting bowl of Classic French Onion Soup!
