Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

½ cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

2 large eggs

1 cup canned pumpkin puree (not pumpkin pie filling)

1 tsp vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)

Cinnamon sugar for topping (1 tbsp sugar + 1 tsp cinnamon mixed together)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.

Mix Sugars and Wet Ingredients: In a large bowl, mix the granulated sugar, brown sugar, and vegetable oil until smooth. Add the eggs one at a time, beating well after each addition. Then mix in the pumpkin puree and vanilla extract until fully incorporated.

Combine Wet and Dry Ingredients: Gradually stir the dry ingredients into the wet mixture until just combined. Be careful not to overmix. If desired, fold in the chopped nuts and chocolate chips.

Prepare for Baking: Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the cinnamon sugar mixture over the top for added flavor and a lovely crunchy texture.

Bake: Place the loaf in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing. Enjoy your delicious Cinnamon Pumpkin Snack Loaf with a warm cup of tea or coffee!
