2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or any nut butter)

1/3 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup dark chocolate chips

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Combine Dry Ingredients: In another bowl, mix the rolled oats, baking powder, cinnamon, and salt.

        Combine Wet and Dry: Add the dry ingredients to the wet ingredients and mix until fully incorporated. The mixture should be thick but pliable.

          Add Chocolate and Nuts: Gently fold in the dark chocolate chips and chopped nuts, if using.

            Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly using a spatula. Press down gently to compact it.

              Bake: Bake in the preheated oven for about 25-30 minutes, or until the bars are firm and lightly golden on the edges.

                Cool and Cut: Allow the bars to cool in the baking dish for about 10 minutes before lifting them out using the parchment paper. Let them cool completely on a wire rack before cutting them into squares or bars.

                  Store: Store the bars in an airtight container in the refrigerator for up to one week or freeze for longer storage.
