10 rice paper wrappers

1 cup vermicelli noodles, cooked and cooled

1 cup cooked shrimp, halved lengthwise (or tofu for a vegetarian option)

1 medium cucumber, julienned

1 medium carrot, julienned

1 avocado, sliced

1 cup mixed herb leaves (mint, cilantro, and basil)

1 red bell pepper, thinly sliced

1 cup cabbage, finely shredded

½ cup peanut sauce (store-bought or homemade) for dipping

Optional: 1 tablespoon sesame seeds for garnish

Prepare the Noodles: If you haven't already, cook the vermicelli noodles according to package instructions. Once cooked, rinse them under cold water to stop the cooking process and drain well. Set aside.

    Set Up Your Rolling Station: Gather all your ingredients in a well-lit workspace. Fill a large shallow bowl with warm water to soften the rice paper wrappers.

      Soften the Rice Paper: Dip one rice paper wrapper into the warm water for about 10-15 seconds until it becomes pliable but not too soft. Carefully lay it flat on a clean surface or a damp kitchen towel.

        Assemble the Rolls:

          a. On the lower third of the softened rice paper, place a small handful of vermicelli noodles.

            b. Layer on a few pieces of shrimp (or tofu), followed by a few sticks of cucumber, carrot, red bell pepper, avocado, shredded cabbage, and a sprinkle of fresh herbs.

              c. Make sure not to overfill—less is more for easy rolling!

                Roll It Up: Starting from the edge closest to you, gently fold the bottom of the rice paper over the filling. Then fold in the sides and roll it tightly until the rice paper fully encloses all the ingredients.

                  Repeat: Continue the process with the remaining rice paper wrappers and filling ingredients. Arrange the rolled rice paper rolls on a serving platter.

                    Chill: Cover the rolls with a damp cloth and refrigerate for at least 30 minutes to 1 hour before serving to let the flavors meld and the rolls firm up.

                      Serve: Just before serving, slice the rolls in half diagonally if desired, and garnish with sesame seeds. Serve chilled with peanut sauce on the side for dipping.
