Ingredients

For the Chili Lime Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Juice and zest of 2 limes

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

½ teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh cilantro, for garnish (optional)

For the Avocado Salsa:

2 ripe avocados, diced

1 medium tomato, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust based on heat preference)

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Instructions

Marinate the Chicken: In a large bowl, whisk together the olive oil, lime juice, lime zest, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper. Add the chicken breasts and ensure they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for extra flavor).

Make the Avocado Salsa: In a separate bowl, combine the diced avocados, tomato, red onion, jalapeño, lime juice, salt, and pepper. Gently toss everything together to combine. Taste and adjust seasoning if necessary. Set aside for flavors to meld while the chicken cooks.

Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill or cook the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

Rest the Chicken: Once cooked, remove the chicken from the grill or skillet and let it rest for 5 minutes. This allows the juices to redistribute for a more tender result.

Serve: Slice the chicken and arrange on a serving platter. Top generously with the avocado salsa and garnish with fresh cilantro if desired. Serve with lime wedges on the side for an extra zesty kick.
