Chili Garlic Tofu Stir-Fry

Ingredients
  

1 block (14 oz) extra-firm tofu, drained and pressed

2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

4 cloves garlic, minced

1-inch piece fresh ginger, grated

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas

3 green onions, chopped

2 tablespoons soy sauce

1 tablespoon chili garlic sauce (adjust to taste)

1 tablespoon oyster sauce (or a vegan alternative)

1 teaspoon sesame oil

Salt and pepper, to taste

Cooked rice or noodles, for serving

Sesame seeds, for garnish (optional)

Instructions
 

Prep the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. In a medium bowl, toss the tofu with cornstarch until evenly coated. This will give the tofu a crispy texture when frying.

    Heat the Oil: In a large non-stick or wok pan, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, carefully add the coated tofu cubes in a single layer. Fry for about 5-7 minutes, turning occasionally until golden brown and crispy on all sides. Remove the tofu from the pan and set it aside on a plate lined with paper towels.

      Sauté Aromatics: In the same pan, add the remaining 1 tablespoon of vegetable oil. Add minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant but not burnt.

        Add Vegetables: Add the sliced red and yellow bell peppers along with the snap peas to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

          Combine Ingredients: Return the crispy tofu to the pan with the sautéed vegetables. Add the soy sauce, chili garlic sauce, oyster sauce, and sesame oil. Toss everything together gently to combine and heat through for another 2-3 minutes. Taste and adjust seasoning with salt and pepper as needed.

            Garnish and Serve: Once everything is well-mixed and heated, remove from heat. Sprinkle chopped green onions and sesame seeds on top for garnish. Serve hot over cooked rice or noodles.
