1 cup shredded cheddar cheese

4 large flour tortillas

1 tablespoon olive oil or cooking spray

Prep the Ingredients: Begin by gathering all your ingredients. If you're using canned chili, open it and set it aside. Dice the green onions and beat the eggs in a bowl with milk, cumin, paprika, salt, and pepper until well combined.

    Cook the Eggs: In a skillet over medium heat, add the olive oil or cooking spray. Once hot, pour in the egg mixture and cook, stirring occasionally, until the eggs are just set but still tender (about 4-5 minutes). Remove from heat and stir in the shredded cheddar cheese until melted and combined.

      Warm the Tortillas: While the eggs are cooking, warm the flour tortillas in a dry skillet over low heat or wrap them in foil and place in a preheated oven (around 200°F or 93°C) for about 5 minutes until soft and pliable.
