Cherry Tomato Puff Tartlets

1 sheet of puff pastry (thawed if frozen)

2 cups cherry tomatoes (halved)

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon freshly cracked black pepper

1 cup goat cheese (crumbled)

1 egg (beaten, for egg wash)

Fresh basil leaves (for garnish)

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare the puff pastry: On a lightly floured surface, roll out the puff pastry sheet to smooth it out. Using a sharp knife, cut the pastry into 4 equal squares.

      Create tartlet bases: Place each pastry square on a baking sheet lined with parchment paper. Using a knife, gently score a 1/2-inch border around the edge of each square, being careful not to cut through the pastry. This border will puff up during baking, creating a raised edge.

        Prepare the filling: In a mixing bowl, combine the halved cherry tomatoes, olive oil, balsamic vinegar, oregano, salt, and black pepper. Toss until the tomatoes are evenly coated.

          Assemble the tartlets: Sprinkle crumbled goat cheese inside the scored border of each pastry square. Distribute the seasoned cherry tomato mixture evenly over the cheese.

            Brush the edges: Brush the exposed edges of the puff pastry with the beaten egg to give the tartlets a beautiful golden color when baked.

              Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed and golden brown.

                Garnish and serve: Once the tartlets are out of the oven, allow them to cool slightly. Garnish with fresh basil leaves before serving. Enjoy warm or at room temperature!
