Cheesy Taco Casserole

Ingredients
  

1 lb ground beef (or ground turkey)

1 packet taco seasoning (or homemade taco seasoning)

1 cup black beans, drained and rinsed

1 cup corn (frozen or canned)

1 can (10 oz) diced tomatoes with green chilies

1 cup salsa

3 cups tortilla chips, slightly crushed

2 cups shredded cheddar cheese (or a blend of Mexican cheeses)

1 cup sour cream

1 cup green onions, chopped

Optional toppings: sliced olives, avocado, jalapeños, cilantro

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, about 5-7 minutes. Drain any excess fat.

      Season the Meat: Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Mix well and let it simmer for about 5 minutes. Remove from heat.

        Layer the Casserole: In a large casserole dish, start by adding half of the crushed tortilla chips to the bottom. Pour half of the meat mixture over the chips. Then spread half of the shredded cheese on top. Repeat these layers once more, ending with cheese on top.

          Add Sour Cream: Dot the top of the casserole with small dollops of sour cream and sprinkle the chopped green onions over it.

            Bake: Cover the casserole with aluminum foil (to avoid over-browning) and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

              Garnish and Serve: Once done, let it cool for a few minutes. Optionally, add your favorite toppings like sliced olives, avocado, jalapeños, or fresh cilantro. Serve hot and enjoy!
