12 large eggs

1 cup whole milk

2 cups shredded cheddar cheese

1 cup crumbled feta cheese

1 cup diced bell peppers (red, green, or yellow)

1 cup chopped fresh spinach

1 medium onion, diced

4 cups cubed day-old bread (croissants or brioche work great)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ teaspoon paprika

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and greasing a 9x13-inch baking dish with non-stick spray or butter.

    Sauté Vegetables: In a large skillet over medium heat, add the diced onion and bell peppers. Sauté them for about 5 minutes until softened. Add the chopped spinach and cook for an additional 1-2 minutes until wilted. Remove from heat and set aside.

      Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the garlic powder, onion powder, paprika, salt, and pepper.

        Combine Ingredients: Add the sautéed vegetable mixture to the egg mixture. Then gently fold in the cubed bread, shredded cheddar cheese, and crumbled feta cheese until everything is evenly distributed.

          Assemble the Casserole: Pour the entire mixture into the prepared baking dish, spreading it out evenly. Make sure the bread cubes are submerged in the egg mixture for even cooking.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and the egg is fully set.

              Cool and Serve: Remove the casserole from the oven and let it cool for 5-10 minutes before slicing. Garnish with fresh chives or parsley if desired, and serve warm.
