Cheesy Ranch Ground Turkey Casserole

1 lb ground turkey

1 cup uncooked pasta (elbow or rotini)

1 cup ranch dressing

2 cups shredded cheddar cheese

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

Salt and pepper to taste

½ cup green onions, sliced for garnish

Optional: crushed tortilla chips for topping

Instructions
 

Preheat the oven: Begin by preheating your oven to 350°F (175°C).

    Cook the pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Brown the ground turkey: In a large skillet over medium heat, add the ground turkey. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat if needed.

        Combine ingredients: To the skillet with the ground turkey, add the ranch dressing, black beans, corn, diced tomatoes, garlic powder, onion powder, paprika, salt, and pepper. Stir well to combine and let everything simmer for about 3-4 minutes.

          Mix in the pasta and cheese: Gently fold in the cooked pasta and 1½ cups of shredded cheddar cheese into the turkey mixture until well combined.

            Transfer to baking dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

              Top with cheese: Sprinkle the remaining ½ cup of cheddar cheese over the top of the casserole. If you’d like, add a layer of crushed tortilla chips for added crunch.

                Bake the casserole: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until bubbly and the cheese is melted and golden brown.

                  Garnish and serve: Remove from the oven and let cool for a few minutes. Top with sliced green onions for a fresh finish. Serve warm and enjoy!
