8 oz (225g) pasta (penne or rotini)

1 lb (450g) ground beef (or turkey for a lighter option)

1 packet (1 oz) taco seasoning mix

2 cups (480ml) beef or vegetable broth

1 cup (240ml) canned diced tomatoes with green chilies (drained)

1 cup (240ml) corn (frozen or canned)

1 cup (240ml) shredded cheddar cheese

1/2 cup (120ml) sour cream

1/4 cup (60ml) chopped fresh cilantro (optional)

Salt and pepper to taste

Optional toppings: sliced jalapeƱos, avocado, or additional cheese

Instructions
 

Cook the pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Brown the meat: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain excess fat if necessary.
