1 lb (450g) ground beef

1 cup long-grain white rice

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth

1 cup shredded cheddar cheese (or your favorite cheese)

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley (for garnish)

Cook the Ground Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and diced bell pepper, cooking for another 2 minutes until fragrant. Then, add the ground beef, breaking it apart with a spoon. Season with salt, pepper, chili powder, paprika, and Italian seasoning. Cook until the beef is browned and cooked through, about 5-7 minutes.

    Add Rice and Tomatoes: Stir in the rice, ensuring it is coated with the flavors of the beef mixture. Pour in the diced tomatoes with their juices and beef broth, and bring the mixture to a boil.

      Simmer: Once boiling, reduce the heat to low. Cover the skillet and let it simmer for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid. Avoid removing the lid too often to ensure even cooking.
