Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.
In a large mixing bowl, combine the sour cream, eggs, and diced onions and bell pepper (if using). Whisk until smooth.
Stir in the thawed corn kernels and both cheeses (cheddar and pepper jack) until they are evenly distributed throughout the mixture.
In a separate bowl, whisk together the cornmeal, baking powder, cumin, smoked paprika, salt, and black pepper.
Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid overmixing.
Gently fold in the green chilies, ensuring they are evenly distributed without breaking them down too much.
Pour the mixture into the prepared baking dish, smoothing the top with a spatula.
Place in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the center is set.
Remove from the oven and allow to cool for 5-10 minutes. Garnish with fresh cilantro if desired, then slice and serve warm.
