Cheesy Chili Mac Muffin Tins

Ingredients
  

2 cups elbow macaroni

1 can (15 oz) chili (preferably with no beans)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

½ cup milk

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon ground cumin

Salt and pepper to taste

¼ cup chopped fresh cilantro (optional, for garnish)

Cooking spray or olive oil (for greasing)

Instructions
 

Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray or olive oil to prevent sticking.

    Cook the macaroni in a large pot according to package instructions until al dente. Drain and set aside.

      In a large mixing bowl, whisk together the milk and egg until well combined.

        Add in the chili, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper, mixing until smooth.

          Now, fold in the cooked macaroni and half of the cheddar and mozzarella cheese into the chili mixture, ensuring everything is well-coated.

            Spoon the mixture evenly into the greased muffin tins, filling each cup to the top.

              Sprinkle the remaining cheese over the top of each cup.

                Bake in the preheated oven for 18-20 minutes, or until the tops are golden and the cheese is bubbly.

                  Remove from the oven and let them cool for about 5 minutes before using a fork or spoon to gently lift the muffins out of the tin.

                    Garnish with chopped cilantro if desired and serve warm. These muffins can be enjoyed fresh or stored in an airtight container for up to 3 days!
