Ingredients

8 oz (225g) penne pasta

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 cup diced smoked ham

1 cup salami, sliced and quartered

1 cup pepperoni, sliced

1 cup Swiss cheese, shredded

1 cup mozzarella cheese, shredded

1 cup cream cheese, softened

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

Add Meats: Add the smoked ham, salami, and pepperoni to the skillet and cook for 5-7 minutes, stirring occasionally, until slightly crispy.

Make Cheese Mixture: In a large mixing bowl, combine the cream cheese, heavy cream, dried oregano, and dried basil. Mix until smooth and creamy. Season with salt and pepper to taste.

Combine: In the same skillet with the meat mixture, add the cooked penne pasta and half of the Swiss and mozzarella cheeses. Pour in the cream mixture and stir until everything is well combined.

Bake: Preheat your oven to 350°F (175°C). Transfer the pasta and meat mixture into a greased baking dish. Top with the remaining Swiss and mozzarella cheeses.

Golden Brown Topping: Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley. Serve hot and enjoy your cheesy charcuterie casserole!
