Cheesy Baked Egg and Spinach Nests

4 large eggs

2 cups fresh spinach, chopped

1 cup shredded cheddar cheese (or cheese of your choice)

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 small onion, finely diced

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon paprika (optional)

Fresh herbs for garnish (chives or parsley)

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or olive oil.

    Sauté Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper, and if desired, add paprika for extra flavor. Remove from heat and let cool slightly.

      Prepare Cheese Mixture: In a mixing bowl, combine the ricotta cheese, shredded cheddar cheese, and grated Parmesan cheese. Mix well and season lightly with salt and pepper.

        Assemble the Nests: Spoon about a tablespoon of the sautéed spinach mixture into each well of the prepared muffin tin, creating a small nest. Top each nest with a generous scoop of the cheese mixture.

          Add the Eggs: Carefully crack an egg into each nest on top of the cheese mixture, trying to keep the yolk intact. Season the tops of the eggs with a pinch of salt and pepper.
