Cheddar Chili Biscuit Sliders

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional for added heat)

1/2 cup unsalted butter, chilled and cubed

1 cup sharp cheddar cheese, shredded

3/4 cup buttermilk

For the Chili Filling:

1 lb ground beef or turkey (or make it vegetarian with quinoa or lentils)

1 cup canned kidney beans, drained and rinsed

1 can (14 oz) diced tomatoes with green chilies

1 small onion, finely chopped

2 cloves garlic, minced

2 teaspoons chili powder

1 teaspoon ground cumin

Salt and pepper, to taste

1 tablespoon olive oil

For Assembly:

Additional sharp cheddar cheese for topping

Sliced fresh jalapeños (optional)

Fresh cilantro, chopped (for garnish)

Preheat the Oven:

    Preheat your oven to 425°F (220°C).

      Make the Biscuit Dough:

        In a large mixing bowl, combine the flour, baking powder, salt, and cayenne pepper. Add the chilled, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Stir in the cheddar cheese. Gradually add the buttermilk, mixing until just combined. Do not overwork the dough.

          Shape the Biscuits:

            Turn the dough onto a lightly floured surface and gently knead a few times until it holds together. Roll it to about 1-inch thickness. Use a biscuit cutter or a glass to cut out rounds. You should have about 12 biscuits.

              Prepare the Chili Filling:
