Cheddar Apple Grilled Snack Sandwich

4 slices of thick whole-grain bread

1 large fresh apple (Honeycrisp or Granny Smith preferred), thinly sliced

1 cup sharp cheddar cheese, grated

2 tablespoons unsalted butter, softened

1 tablespoon honey (optional, for drizzling)

Pinch of cinnamon (optional)

Salt and pepper to taste

Preheat the skillet: Heat a non-stick skillet or griddle over medium heat.

    Prepare the bread: Spread softened butter generously on one side of each slice of bread. This will be the outer side that gets golden and crispy.

      Assemble the sandwich: On the unbuttered side of two slices, layer half of the grated cheddar cheese evenly. Then, fan out the thin apple slices on top of the cheese. Sprinkle with a pinch of cinnamon, a dash of salt, and some freshly cracked pepper if desired. Add the remaining cheddar cheese on top of the apple slices.

        Top the sandwich: Place the other two slices of bread on top, buttered side facing out.
