Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon smoked paprika

1 cup shredded sharp cheddar cheese

1/2 cup diced pepperoni

1/2 cup diced salami

1/4 cup chopped olives (green or black)

3/4 cup milk

1/2 cup olive oil

2 large eggs

1 tablespoon Dijon mustard

Optional: Fresh herbs (like chives or thyme) for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and smoked paprika until well combined.

Mix in Cheeses and Meats: Stir in the shredded cheddar cheese, diced pepperoni, diced salami, and chopped olives, ensuring that the meats and cheese are evenly distributed.

Prepare Wet Ingredients: In a separate bowl, whisk together the milk, olive oil, eggs, and Dijon mustard until smooth.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixtures together until just combined. Be careful not to overmix; a few lumps are perfectly fine!

Fill Muffin Tin: Carefully scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. You can sprinkle fresh herbs on top if desired for added flavor.

Bake: Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Enjoy: Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
