2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 cup stone-ground grits

4 cups water or chicken broth

1 cup shredded sharp cheddar cheese

½ cup whole milk

2 large eggs

¼ cup all-purpose flour

1 teaspoon baking powder

Salt to taste

Cooking spray or extra oil for the waffle iron

For the Toppings:

¼ cup chopped green onions

¼ cup cooked and crumbled bacon

Sriracha or hot sauce, for drizzling

Fresh parsley, for garnish

Instructions
 

Prepare the Cajun Chicken:

    - Season the chicken breasts generously with Cajun seasoning, salt, and pepper.

      - Heat olive oil in a skillet over medium heat. Once hot, add the chicken and cook for about 6-8 minutes per side, or until fully cooked and golden brown. Remove from the pan and let rest before slicing.

        Cook the Grits:

          - In a medium saucepan, bring water or chicken broth to a boil. Slowly whisk in the grits and reduce to a simmer. Cook for about 20-25 minutes or until the grits are thick and creamy, stirring occasionally.

            - Once cooked, stir in the cheddar cheese, milk, eggs, and a pinch of salt. Mix well until fully combined.

              Make the Waffles:

                - Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray or oil.

                  - In a separate bowl, combine the cooked grits mixture with flour and baking powder until well mixed. Pour the batter into the preheated waffle iron, filling it according to your waffle iron's guidelines. Cook until golden and crispy, about 5-7 minutes, depending on your machine.

                    - Repeat until all batter is used, usually making 4-6 waffles.
