Ingredients

1 medium head of green cabbage, chopped

1 pound ground beef (85% lean)

1 medium onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chilies

1 teaspoon paprika

1 teaspoon oregano

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon soy sauce

1 cup cooked rice (optional, for a heartier meal)

Fresh parsley, for garnish

Instructions

Prep the Ingredients: Begin by chopping the cabbage, onion, and mincing the garlic. If using rice, make sure it is cooked before starting the next steps.

Cook the Beef: In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the ground beef, seasoning it with salt and pepper. Cook until browned, breaking it up into smaller pieces, for about 5-7 minutes. Drain excess fat if necessary.

Sauté Aromatics: Add in the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

Add Cabbage: Stir in the chopped cabbage, mixing well with the beef and onions. Cook for about 5 minutes until the cabbage starts to wilt.

Incorporate Tomatoes and Spices: Pour in the diced tomatoes with their juices, followed by the paprika, oregano, cumin, and soy sauce. Mix everything together thoroughly.

Simmer: Reduce the heat to low and cover the skillet. Allow the mixture to simmer for about 15-20 minutes, stirring occasionally until the cabbage is tender and the flavors meld together.

Check Seasoning: Give it a taste and adjust the seasoning with more salt or pepper if needed.

Serve: If using rice, serve the beef and cabbage mixture over a bed of rice or mix it in if you prefer a more combined dish. Garnish with fresh parsley for an added flavor boost and a pop of color.

Enjoy: Serve hot and enjoy your delicious, hearty meal that’s loaded with flavors!
