4 medium-sized russet potatoes

1/2 cup unsalted butter, melted

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Potatoes: Wash and scrub the russet potatoes until clean. Pat them dry with a kitchen towel. Using a sharp knife, slice the potatoes evenly about every 1/4 inch, being careful not to cut all the way through (leave about 1/2 inch at the bottom intact).

      Make Garlic Herb Mixture: In a mixing bowl, whisk together the melted butter, olive oil, minced garlic, rosemary, thyme, salt, and pepper.

        Coat the Potatoes: Place the prepared potatoes on a baking dish. Using a spoon or brush, generously drizzle the garlic herb mixture over the potatoes, allowing some to dribble down into the cuts.

          Bake: Place the baking dish in the preheated oven and bake for 30 minutes. After 30 minutes, remove the dish from the oven and brush the potatoes again with the leftover herb mixture.

            Add Parmesan: If using, sprinkle the grated Parmesan cheese over the potatoes for the last 15 minutes of baking to allow it to melt and crisp up.

              Finish Baking: Return the potatoes to the oven and bake for an additional 15-20 minutes, or until the potatoes are tender on the inside and crispy on the edges.

                Serve: Remove from the oven, garnish with freshly chopped parsley, and serve hot. Enjoy the buttery, garlicky goodness!
