8 cups stale brioche or challah bread, cubed

1 cup pecans, chopped

4 large eggs

2 cups whole milk

1 cup heavy cream

1 cup granulated sugar

1/2 cup brown sugar, packed

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 cup caramel sauce (store-bought or homemade)

Optional: whipped cream for serving

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or cooking spray.

    Prepare the Bread: In a large mixing bowl, combine the cubed brioche or challah with the chopped pecans. Toss to mix and set aside.

      Mix Wet Ingredients: In a separate bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, ground cinnamon, salt, and melted butter until well combined and smooth.

        Combine Mixtures: Pour the egg mixture over the bread and pecan mixture, ensuring that all pieces are coated. Gently stir the mixture so that the bread absorbs the liquid. Let sit for 15-20 minutes to allow the bread to soak up the custard.

          Transfer to Baking Dish: Spoon the soaked bread mixture into the prepared baking dish, spreading it evenly. Drizzle half of the caramel sauce over the top of the bread pudding. Reserve the other half for serving.

            Bake: Bake in the preheated oven for about 45-55 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
